Grimaldi's Pizzeria Open inside The Shoppes At The Palazzo Las Vegas

Grimaldi’s Pizzeria, famously known for its award-winning, hand-tossed, coal-fired brick oven pizzas and calzones, is now open inside The Shoppes at The Palazzo. Grimaldi’s Pizzeria offers guests freshly prepared salads, pizzas, calzones and delicious desserts that are a perfect complement to an extensive wine list and full bar.

The opening of Grimaldi’s Pizzeria inside The Shoppes at The Palazzo is the beginning of a major expansion planned for the restaurant group, headed by President and CEO Joey Ciolli. The company currently operates over 26 restaurants in Florida, Arizona, New York, and Nevada.

Grimaldi’s Pizzerias’ expansion plans for 2012 include Mount Pleasant, South Carolina, Tampa, Florida and various other sites TBA.

In the world of pizza, Grimaldi’s is an institution that has garnered more awards than any other pizzeria in the country with more celebrity sightings than most 5-star restaurants. Using only the freshest ingredients, a “secret recipe” pizza sauce, handmade mozzarella cheese and dough, Grimaldi’s serves traditional pizza (as it began in Naples, Italy) in an upscale yet casual, family oriented pizzeria.

“We are very proud of the newest addition to the Grimaldi’s Pizzeria family. This opening marks our sixth location in Nevada and our second location on the Las Vegas Strip,” said Joey Ciolli, President and CEO of Grimaldi’s Pizzeria. “We look forward to sharing over 100-years of pizza making traditions with the guests at The Shoppes at The Palazzo. ”

It has been said that the secret to true New York-style pizza is the water and Grimaldi’s Pizzeria believes this, too. To keep the integrity of the water used in the Brooklyn pizzeria location, Grimaldi’s Pizzeria hired a chemist to analyze and recreate the mineral content and exact composition of the water to ensure the dough made in Las Vegas tastes just as delicious as it does in Brooklyn.

Keeping with tradition, signature coal-fired ovens are used to deliver true Grimaldi’s Pizzeria pizzas and calzones to Las Vegas patrons. The coal-fired ovens at Grimaldi’s Pizzeria are designed and built by hand to deliver a unique flavor and consistency attainable only by this form of firing.

The new venue is open daily for lunch and dinner, from 11 a.m. to 2 a.m., and is located at 3327 Las Vegas Blvd. on the second floor.

The signature 25 ton oven is heated daily by 100 pounds of coal that will reach a temperature of up to 1,200 degrees. The intense heat of the oven evenly bakes the pies to create Grimaldi’s famous crispy and smoky thin crust that Zagat has voted best pizza year after year.
